pancake mix

For Christmas, Mom did up a bunch of mixes w/handmade recipe book including recipes for each mix, for each of us 3 'kids' out of a book her aunt gave her one year for Christmas. AWESOME! I FINALLY begged & pleaded long enough for the mix recipes that she just let me borrow the book! :)

I love having the pancake mix the most! so here it is:

Pancake Mix

10 cups all purpose flour (I use 1/2 unbleached & 1/2 whole wheat)
2-1/2 cups instant nonfat dry milk
1/2 cup sugar
1/4 cup baking powder
2tablespoons salt

combine all ingredients in a large bowl. stir until blended & put in an air tight container. (I put it all in the storage container & shake it up) Label & use w/in 8 months. Makes 13 cups of mix.

to make a batch of pancakes:
1-1/2 cups pancake mix
1 cup water
1 egg, slightly beaten
3TBS oil

combine in a medium bowl (I use the pampered chef 8 cup mixing 'cup', mix a double batch & put remaining mix in the fridge for the next day)Let rest 5 minutes. cook on a hot oiled griddle about 3-4 minutes per side or until browned to your liking.  Usually makes10-12 4" pancakes.

can also be used to make:
 *Onion Rings*
preheat oil in deep fryer to 375.  Make batter w/ice water.  Dip thinly sliced  separated onion rings into batter, then fry about 2 minutes until golden.

*Golden French Toast*
2 eggs beaten
1cup milk
1cup pancake mix
10 slices bread
butter for grill

in medium, shallow bowl, combine eggs, milk & mix.  Blend well. Dip bread slices into the bater & cook on hot buttered briddle about 3-4 minutes until lightly borwned on both sides.

*Puff Oven Pancakes*
4TBS butter or margarine
4eggs
2/3 cup milk
2/3 cup pancake mix

preheat oven to 450.  put 2 TBS butter or margarine each into 2 9-inch pie plates.  Put in preheating oven to melt.  In a blender, combine eggs, mik & mix.  Pour batter into pie plates.  Bake about
18 minutes or until pancake are puffy & browned.  Do not open oven while cooking.
